 Our noodley home base, our raison de'etre. This is an almost 50 percent ratio egg noodle making it higher in protein than the average egg pasta. "Rich and wiggly!"  and "talks back " are some of the ways we describe this one. This Pasta is slow dried on wooden rollers and 'broken' for the final roll giving it its unique texture and the supreme ability to accept and hold sauce.  Made with Goodspeed Family Farm  Pasture Raised Eggs (located in Culver Oregon) and Caputo OO flour which is known for its adherence to European quality guidlines. No Glyphosate, Potassium Bromate or additives.
